Taking a brief look at the traditional products of Alonissos you will get a taste of its delicacies!

To begin with, we will present you three pies: Ladle pie, Sweet Pumpkin pie and Pita of Tsopanis. The Pita Base will be the same for the first two pies, the Pita of Tsopanis has a more simplified preparation.

PITA BASE

In a bass / bowl we place the following materials:
• 1kg flour (soft)
• A pinch of salt
• Complement ≈500ml of lukewarm water and knead it in succession, so that our dough is soft and smooth without sticking.
Divide the dough into 4 equal parts and let it rest for ≈15 minutes at room temperature. Then, open a thin sheet sprinkling it with flour.

1) Ladle pie

FILLING
To make the FILLING we need the following MATERIALS:
• 1kg chicken
• 500gr spinach
• 500g of poppies
• 5 fresh onions
• 1 leek
• ½ bunch of fennel or dill
• 1kg salt
• ½kg. pepper
• 80ml extra virgin olive oil

THE PITA MAKING PROCESS is the following:
• Chop: the dill and the dry and fresh onion
• Moderately cut all other materials
• Mix them slightly by adding salt, pepper and olive oil

PITA
• Put some olive oil to your pan
• Put the first sheet, grease it and place on top of it the second sheet
• Place the filling by covering it with two other oiled sheets between and on the surface
• Preheat the oven
• Bake the pie at 180 – 200 ° C for ≈40 minutes
When the pie is brown, remove it from the oven and let it cool down.

2) Sweet pumpkin Pie

FILLING
In order to make the FILLING we need the following MATERIALS:
• 2kg of sweet pumpkin
• 150ml water
• 200g of sweet trachana
• 250g of crystallized sugar
• ½kg. Mint
• ½kg. cumin
• ½kg. Cinnamon

THE PITA MAKING PROCESS is the following:

• Place the cleaned pumpkin in small saucepans in the saucepan, add the water and simmer for 5 minutes
• Add the trachana and sugar simmering until the pumpkin melts
• Turn off the fire and add the mint, cumin and cinnamon
• Allow the mixture to cool

PITA
• Put some olive oil to your pan
• Put the first sheet and pour over it a pinch of cinnamon, a pinch of cumin and some olive oil
• From the top we put the second sheet and empty the filling
• Cover with two other leaves by dropping between a pinch of cinnamon, a pinch of cumin and some olive oil
• Lubricate the surface of the pie with olive oil
• Preheat the oven
• Bake the pie at 180 – 200 ° C for ≈30-40 minutes
When the pie is brown, remove it from the oven and let it cool down.

3) THE PITA OF TSOPANIS

FILLING – PIE
In order to make the FILLING we need the following MATERIALS:

• 2kg fresh goat cheese
• 2 eggs
• 1 pinch of salt
• 200g flour for all uses
• ½ct. olive oil

THE PITA MAKING PROCESS is the following:

• Κnead all ingredients in a bass / bowl
• Pour the mixture into an oiled pan
• Preheat the oven
• Bake the pie at 200 ° C for ≈30 minutes

When the pie is brown, remove it from the oven and let it cool down.
